Here’s what you can expect when dining at Ground Brighton Festival

We’re so excited to share the full menu that we will be bringing to Brighton Festival. Ground will feature a three-course meal prepared by local chef Jethro Carr, founder of Brighton’s Kitchen Academy.

Jethro has developed the Ground Brighton Festival menu, sourcing ingredients from local and regional suppliers. With more than twenty years’ experience and a regular face on the Brighton food scene, he’s is the perfect fit to bring our 5 key ingredients to life.

We have focused on developing the menu to include local and organic produce wherever possible.

It only seemed fitting that the menu should also be plant-based. I'm really looking forward to delivering this unique project and to welcoming everyone into the magic of Ground"

Starter: The Three Sisters 

Roasted squash is accompanied by a flavourful herb yogurt with bean & chilli corn salsa.

Bread Rolls and Butter

Baked fresh on site each day.

Main course: Bibimbap Bowl 

The main course is a Korean-inspired Bibimbap bowl, including a range of sautéed (shitaki, bean sprouts) and pickled vegetables such as cucumber, radish and carrot along with seasoned wilted greens and a spicy gochujang sauce.

Dessert: Banana & Date Cake 

Warm date and banana cake, topped with caramelised banana and a drizzle of date syrup.

Finish your Ground experience with Montezuma’s truffles, Skylark Coffee, and a moment of meditation.
